Onions

Country Magic onions are fairly new in Atlantic Canada, having been grown here for about 20 years. We are one of the pioneers of onion production in Nova Scotia. With a lot of research and trials we have developed a program that provides a quality, flavourful onion in a Maritime climate, available almost all year.

There are benefits to regularly incorporating onions into your diet. Onions contain phytochemicals such as quercetin. Quercetin is an antioxidant superstar that lowers the risk of heart disease, some cancers and cholesterol, as well as acting as an anti-inflammatory. The sulphur-containing compounds (allicin and alliin) give the onions their pungency, and have been implicated in cancer prevention (colon, esophagus and breast). Onions have been associated with healing powers for centuries and are commonly recognized to possess anti-microbial properties. In addition they contain a source of vitamin B6, vitamin C, folate and manganese.

Country Magic onions can be used in almost every type of food, including soups, stews, stir frys, fresh salads and as a garnish to pretty much any savoury dish, offering an accent that could be described as pungent, sharp, spicy, mild, sweet or flavourful (depending on the type and variety of onion, how you prepare it and who you ask!). Usually chopped or sliced, onions are found in a large number of recipes and preparations across almost every culture in the world. The whole plant is edible and is used as food in some form or another. When sautéed, our yellow onions turn a rich brown colour and give soups and gravies that caramelized, sweet, full savory flavour.

Onions are best stored at 2°C to 12°C or as cool as possible in the dark in order to maintain freshness and prevent sprouting.

Innovation

Each year is still a learning process. We trial new varieties and modify our production practices to improve taste, quality, storability and sustainability. One of our toughest challenges is our humid summers and damp falls. We are currently doing trials in several areas of onion research, including identifying and minimizing sprouting, identifying and minimizing internal defects (in partnership with other NS growers) and growing new varieties of specialty onions using modified production practices. The purpose of this R&D is to offer you consistent quality of locally-grown onions for a longer period throughout the year.
