6 egg whites
1 tsp cream of tarter
¼ cup white sugar
1 tbsp red beet juice
Place the egg whites into a clean and dry mixing bowl. Add the cream of tartar and beat until medium peaks begin to form. Slowly add in the white sugar, and continue to beat until stiff peaks form. Slowly add the beet juice to the whites by drizzling it down the side of the bowl; mix to incorporate.
Place the mixture on the centre of a parchment lined baking pan, spread into 2 six inch circles, and place in a preheated 300˚F oven and bake for 1 hour.
