Honey Oven Roasted Potatoes
Serves 2 to 4
- 3 lbs potatoes, washed, and quartered
- 1 cup olive oil
- 1 tsp salt
- ½ tsp cracked pepper
- 1 tbsp Dijon mustard
- ¼ cup honey
- 1 tbsp fresh dill
Pat the potatoes dry and place in a large bowl or zip lock bag,
In a separate bowl stir in the oil, mustard honey dill salt and pepper and mix well. Then incorporate the two together ensuring that potatoes are well coated.
Place potatoes on a parchment line baking dish and pour any remaining sauce over top.
Bake in a 400 oven for 20 to 25 minutes or until the potatoes are fork tender.
