Horseradish & Blue Cheese Mashed Potatoes
Serves 4 to 6
- 5 lb yellow potatoes peeled and cut into quarters
- ½ cup of cream 35%
- 2 tbsp butter
- 3 oz blue cheese, divided
- 1 cup Horseradish Mayo
Place to prepare potatoes in a heavy bottom saucepan and cover with cold water. Bring to a boil and cook until fork tender. Drain then add your cream and butter and mash the potatoes and stir in ¾ of the horseradish mayo and 2 oz of the blue cheese. Place the potatoes into a serving dish, sprinkle the other ½ half of the blue cheese on top, and drizzle with the remaining horseradish mayo.
*While the potatoes are cooking prepare the horseradish mayo.
- 1 and ½ cups mayonnaise
- ¼ cup horseradish
- 2 tbsp lemon juice
- ¼ cup grated Parmesan cheese
Combing all the ingredients and mixing well.
