Potatoes are often thought of as “just a starch” but they contain many important vitamins and minerals that we need in our daily diets. Depending on the type, one medium potato will provide you with 25-50% of your daily requirements of Vitamin C as well as 20% of your potassium requirements. They contain the phytochemicals caffeic acid, chlorogenic acid, and glutathione. Potatoes would also be in the running for “most well rounded vegetable” if you count the number of vitamins and minerals they contain; a source of iron, folate, vitamin C, magnesium, phosphorous, zinc, copper, manganese, niacin, pantothenic acid and thiamin and a good source of B6 and fibre. The “lowly” potato has a lot to offer!
