¼ lb tender young garlic scapes
Juice of one lemon
½ cup Parmesan cheese
½ cup olive oil
½ cup walnuts
Salt and pepper to taste
Cut off the spiny tops of the scapes, and chop into manageable pieces (2 to 3 inches). Blend the scapes with the walnuts and olive oil in a food processor until smooth. Empty into a bowl and stir in the Parmesan cheese, lemon juice, salt and pepper. Serve with just about anything; pasta, crackers, steamed potatoes, veggies, homemade pizza or wraps.
